Happy Monday! Last week we kicked off our annual New Year’s Transformation Challenge and _lots_ of great habits start this time of year.
But what happens when those old habits and cravings start peeking their ugly head? You need to make sure you have options in order to remain on track for success.
For nearly 20 years I’ve taught the weight loss groundrules that are in my 14 Day Flat Belly Jumpstart
One of the groundrules that I preach is that you need to be able to enjoy indulgent things on occasion to avoid ‘diet fatigue’ causing you to lose motivation and fall off track.
For me, that means some type of chocolate dessert!
Here’s a great high protein recipe with a lot of flexibility to add your favorite ingredients and toppings.
Chocolate Protein Mug Cake
Ingredients:
✅ 2 tablespoons chocolate protein powder
✅ 2 tablespoons almond flour (or any flour of choice)
✅ 1 tablespoon unsweetened cocoa powder
✅ 1/4 teaspoon baking powder
✅ 1 egg
✅ 2 tablespoons unsweetened almond milk (or any milk of choice)
✅ 1/2 teaspoon vanilla extract
✅ 1 teaspoon stevia, erythritol, splenda or honey (optional, adjust to taste)
Instructions:
#1) Mix Dry Ingredients ➡️ In a microwave-safe mug, combine chocolate protein powder, almond flour, cocoa powder, and baking powder.
#2) Add Wet Ingredients ➡️ Stir in the egg, almond milk, and vanilla extract until smooth.
#3) Sweeten ➡️ Add sweetener if desired.
#4) Microwave ➡️ Cook in the microwave on high for 60-90 seconds. Watch closely to avoid overcooking. I personally like mine extra gooey and cook it around 50 seconds!
#5) Cool and Enjoy ➡️ Let it cool slightly before digging in.
Optional Healthy Toppings
- Nut Butter: Drizzle almond or peanut butter for a creamy, rich topping.
- Fresh Fruit: Add sliced strawberries, banana, or raspberries for natural sweetness.
- Greek Yogurt: A dollop of plain or vanilla Greek yogurt adds creaminess and extra protein.
- Chopped Nuts: Sprinkle with crushed walnuts, almonds, or pecans for crunch.
- Dark Chocolate Chips: Add a few for a gooey chocolate texture.
- Unsweetened Coconut Flakes: Sprinkle for a tropical twist.

This mug cake is not only easy to make but also packed with protein and flavor. Perfect for a quick dessert or post-workout treat!
